Guinness Chocolate Mousse with Whiskey Whipped Cream -

Happy St. Patrick’s Day, friends! I’m celebrating with Guinness Chocolate Mousse. 😍😍 It’s topped with Irish whiskey whipped cream and chocolate shavings for extra luck.

I wanted to make something authentically Irish for St. Patrick’s Day, and I know a lot of stuff we do here in the US is kinda made up! The green beer, green foods, corned beef. And upon further research, there doesn’t seem to be anything super specific that’s served on St. Patrick’s Day in Ireland. People tend to make their usual Irish dishes, family recipes, and whatever they want to celebrate! I scrolled through pages and pages of “top 10 authentic Irish dessert” lists and finally landed on Guinness Mousse because it’s something they actually serve at the Guinness Storehouse in Dublin.

This mousse is super creamy, light, and fluffy all at the same time. Mousse is one of those desserts that’s just so luxurious and rich, and I’m obsessed with the texture. I make a lot of cakes and things obviously, but mousse really is one of those things that I absolutely adore. It’s like an ideal dessert for a special occasion. So. Good.

I topped this Guinness Chocolate Mousse with a whiskey whipped cream. You can use whatever whiskey you have on hand because there’s only a tablespoon of it in there, but if you happen to have Irish whiskey for St. Patrick’s day, that would be the way to go! I also used Irish butter in the mousse itself, which I highly recommend, but you can use what you already have in your fridge. Irish butter is richer, creamier, and bolder than the average butter we have here in the US, and it really adds extra buttery deliciousness to this mousse.

Okay, time to go grab some Guinness so you can make this mousse! Sláinte!

Guinness Chocolate Mousse

While a great option for St. Patrick’s Day, this rich and creamy mousse can be made any time! It’s decadent, chocolaty, and has that classic chocolate stout flavor.

Prep Time: 40 minutes mins

Cook Time: 10 minutes mins

Chill time: 6 hours hrs

Total Time: 6 hours hrs 50 minutes mins

Servings: 8

Guinness Chocolate Mousse

8 oz semisweet chocolate chopped½ cup (1 stick) unsalted Irish butter such as Kerrygold⅓ cup granulated sugar¾ cup Guinness Stout Beer3 large eggs separated1 cup heavy whipping cream¼ tsp cream of tartar

Irish Whiskey Whipped Cream

1 ½ cup heavy whipping cream2 tbsp powdered sugar1 tbsp Irish whiskeyChocolate shavings or cocoa powder for garnish

To make the mousse:

In a small bowl set over a pan of simmering water, or in a double boiler, combine the chocolate, butter, and sugar. Stir until the chocolate has melted and the mixture is smooth.

Stir in the Guinness and whisk in the egg yolks. Remove from the heat.

In a small bowl, whip the cream with an electric mixer until soft peaks form. Fold the cream into the chocolate mixture.

With clean beaters, in a medium bowl, beat the egg whites with an electric mixer until stiff peaks form. Fold the whites into the chocolate mixture.

Fill eight 6-oz cups about three quarters full. Refrigerate for 6 hours, or overnight.

To make the whipped cream:

Combine all ingredients and whip on medium-high speed with an electric mixer until stiff peaks form.

Top mousse with whipped cream and chocolate shavings. Serve immediately. Leftovers can be stored in the refrigerator for 2-3 days.

Mousse can be made a day or two in advance and stored in the refrigerator with plastic wrap pressed directly onto the surface of the mousse. Before spooning into glasses, give it a good whisk or whip with an electric mixer.
